If you can point me to a tutorial for putting text behind the foreground, I'd be very grateful. I'm just now learning how to use layer masks. Is that how it's done?

Very simple actually, treat the text layer as any other layer , rastarize it once you're satisfied with the font , size ,color etc. , then unlock the background layer , put the font behind the subject ( top most layer ) . Font then, and background at the bottom.
Does that make sense ??

I really like 26 and 28, 30, 31 and 35. They all have wonderful coloring and compositions with interesting things going on in the background!
